100 Years of Processed and Unhealthy Foods

Before food processing, everyone ate “farm-to-table.” There was no other choice —people could only eat what was produced nearby since foods spoiled if they were transported long distances.

Food processing completely changed the way we buy and eat foods. Processed foods now account for more than three-quarters of all the foods we eat, and ultra-processed foods account for nearly two-thirds of our diet. These foods lack the nutrients our bodies need, and they are loaded with sugar, salt, bad fats and artificial flavorings, colors and preservatives. These foods also are scientifically formulated to stimulate our brains into overeating.

Consumption of fat, salt and sugar signals our brains to release large amounts of dopamine, a chemical that makes us feel happy and blissful. Foods rich in refined sugars, salt and fat highjack our brains the same way as cocaine, nicotine and other addictive stimulants. We eat junk, and our brains release dopamine to get these pleasurable feelings. In food science terms, this cycle is called the “Bliss Point.” It’s why we overeat fatty foods or compulsively snack on chips and other salty foods.


These foods lack essential nutrients, and overconsumption leads to obesity since it’s impossible to achieve satiety from eating processed foods. The end result of 100 years of eating processed foods? Two-thirds of the adult population in the U.S. is overweight or obese.
